Breakfast
Breakfast Granola
- 3/4 cp brown sugar
- 3/4 cp water
- 1 T honey or agave nectar
- 1 T canola oil
- 1 tsp salt
- 1 T pure vanilla extract
- 8 1/2 cps either old-fashioned oats or steel cut oats
- 1 1/2 T wheat germ
- 2 T flaxseed, ground
- 1 T cinnamon
- 1/2 cp walnuts, chopped
- 1 cp almonds
- 1/2 cp unsweetened coconut (optional)
- 1 cp dried cherries (or other dried fruit - raisins, apricots, cranberries)
- Set oven to 300.
Combine brown sugar, water, agave, oil, salt, and vanilla extract in medium saucepan. Heat over medium high heat till sugar dissolves. Watch so as not to burn.
In large bowl, combine the oats, wheat germ, ground flax, cinnamon, walnuts, almonds, and unsweetened coconut. Gently toss mixture. Add the warmed sugar mixture and toss all to coat.
Spread the granola on large, shallow baking sheet. Bake for 20 minutes. Then stir the granola, rotate the pan, and bake for 20 minutes more.
Remove from oven, and allow to cool completely. When cooled, add the dried fruit. Mix all.
Store the granola in plastic container with very tight lid. This will keep for several weeks. Enjoy granola as a snack or for morning breakfast with non-dairy milk and your favorite fruit.
