PUMPKIN-CHIA SEED MUFFINS
(At the end of our 5 week Kickstart to Health, one participant brought this to our last class potluck. This recipe was a big hit - tasty, hearty with calls for more!)
This tasty treat came from Emily Richard who formerly worked for The Cancer Project in D.C. Can you imagine?....a chocolate chip cookie that tastes like more, and is full of good, hearty high fiber grains and cereals??

When I began searching for plant based bread recipes, most still called for oil. Vegetarian breads often used eggs. I had a hard time finding a good recipe.
