This recipe is a cancer prevention super star. Quinoa, the ancient grain and mainstay of South America, is higher in protein than other grains. It absorbs the flavors of surrounding ingredients. And the pomegranates, well, not only are they packed with Vitamin C, but are loaded with health-promoting polyphenols, favonoids, and ranks high for its antioxidant and anti-inflammatory effects. What more could you ask for? Laboratory evidence shows that substances, called urolithins, that our body produces from pomegranates' compounds, can decrease prostate cancer cell growth and ability to spread. So, for the men in your life - stock up on pomegranates!
Folks tend to avoid pomegranates because they think they are difficult to open and deseed. Check online. There are numerous videos on how to seed this fruit. It is easy and well worth the effort.
