This is another of Chef AJ's wonderful creations.
1 cup raw almonds, soaked overnight
1 cup raw sunflowers, soaked overnight
Juice from 2-3 lemons
2 stalks celery, chopped
2 scallions, chopped
1/2 cup Italian parsley, chopped
2 T kelp powder
1 T dried dill
1 tsp dulse (a sea vegetable)
Rinse the soaked nuts and seeds and process in food processor with the lemon juice, and add only enough water to make the blades turn easily. Stir in the remaining ingredients by hand. Chill. You can use this either in a sandwich, or stuffed in lettuce leaves, or. as Chef AJ suggests, shape the pate into a fish and serve with healthy crackers or veggies. Be creative!
